The St. Agrestis Phony Negroni offers a complex and layered profile, delivering the essential juniper, citrus zest, and balanced bitterness expected from a classic Negroni. On the palate, nuances of herbs and florals combine with the earthy warmth of gentian root and the subtle sweetness of orange peel, which helps to round out the flavor. Light carbonation provides a lively feel, enhancing the overall drinking experience and mimicking the depth typically found in alcoholic spirits. The finish is long, leaving lingering peppery notes and a distinct, satisfying bitterness.
St. Agrestis was initially established in 2014 by sommeliers Nicholas Finger and Fairlie McCollough, who were inspired by regional amari during a trip to Northern Italy. In 2017, as the original creators focused their attention back on wine, the brand was acquired by brothers Louis and Matt Catizone and their friend Steven DeAngelo, an industry veteran from Greenhook Ginsmiths. Growing up with strong Italian-American influences, the Catizone brothers relocated the operations to Greenpoint, Brooklyn, with a vision of blending traditional Italian drinking culture with modern American tastes. The team at their Brooklyn distillery is committed to using organic ingredients and old-world methods to produce their acclaimed range of spirits and non-alcoholic alternatives, including the widely recognized Phony Negroni.
