The Chablis from Camille & Laurent Schaller captures the essence of its Kimmeridgian limestone origins with striking clarity. The nose opens with a focused bouquet of white blossoms, tart green apple, and Meyer lemon zest. On the palate, the wine reveals a chiseled structure defined by a piercing, citrus-driven freshness and a deep, stony core. This lean power transitions into a long, reverberating finish marked by a distinct saline quality and the chalky texture characteristic of the region’s finest unoaked Chardonnays.
The estate is a relatively young but highly regarded family operation based in the village of Préhy. While Laurent Schaller spent decades cultivating vines and selling grapes to the local cooperative, the trajectory of the domaine shifted in 2014 when his son, Camille, returned to the family farm after completing his enological studies. Together, they made the pivotal decision to begin estate-bottling their own wines under the family name. Today, the father-son duo manages approximately 18 hectares of sustainably farmed vineyards, focusing on minimal intervention and stainless steel aging to ensure that the unique mineral signature of their various Chablis parcels remains the focal point of every bottle.
